Salsa Verde
This traditional condiment is usually served with grilled meats but is great on roasted vegetables or as a dip.

Ingredients
2 cups Pukara Estate Premium Extra Virgin Olive Oil
2 cups vinegar
2 handfuls continental parsley leaves, chopped
1 stick celery, chopped
1 clove garlic
1 slice stale white bread, crust removed
1 tablespoon capers
1 small chilli
Sea salt
Freshly ground black pepper
Method
Place all ingredients into an electric blender and blend until well combined. Strain through a fine sieve.
