Roast Lemon Chicken

This fresh, flavorsome chicken recipe is great served with a green salad.

Ingredients

1 whole chicken

1 garlic globe, peeled

60mL Pukara Estate Lemon Extra Virgin Olive Oil

2 lemons

2 tbsp butter

Salt and pepper

¼ cup roughly chopped parsley

Method

Preheat oven to 220°C.

Roughly chop the garlic and cut 1 lemon into quarters. Rub the outside of the chicken with the garlic and the peel side of the lemon, then place them into the cavity of the chicken along with 20mL of the Lemon Oil.

Slide the butter under the skin of the chicken, then pour the remaining Lemon Oil over the top and into the roasting tin. Season with salt and pepper.

Roast for 45 minutes.

Remove the chicken from the oven, squeeze the juice from the second lemon over it, and sprinkle with parsley.

Cook for a further 15 minutes or until juices run clear when the chicken thigh is pierced with a skewer.
