Ingredients
Kipfler potatoes, washed
Pukara Estate Premium Extra Virgin Olive Oil
Garlic cloves
Freshly ground black pepper
Salt
Method
Preheat oven to 200°C. Wash potatoes well with a brush under running water. Brush the base of a baking dish with Extra Virgin Olive Oil. Place potatoes in the baking tray with whole, unpeeled garlic cloves. Generously cover with freshly ground black pepper and sprinkle with salt. Toss the potatoes around in the baking tray to ensure all pieces are well coated with oil. Place in the oven on the top shelf and roast until browned or until the flesh is tender.
