Abalone Pasta

Ingredients

300g farmed baby abalone

250g spaghetti

1 clove garlic, thinly sliced

1 red chilli, thinly sliced

1 drizzle Pukara Estate Premium Olive Oil

Pukara Estate Smoked Salt Flakes

1 lemon cheek, juiced

2 sprigs parsley

Method

Run your knife through the abalone and pull until the meat is detached. Wash in water.

Boil water in a pot, add spaghetti, and cook for approximately 5 minutes.

Thinly slice the abalone, garlic, and chilli. Heat a pan with a drizzle of olive oil and a pinch of salt. Add the sliced ingredients and stir together, cooking for a few minutes before removing from heat.

Place the cooked spaghetti into the pan and stir well, adding another drizzle of olive oil and a squeeze of lemon juice.

Once combined, plate the spaghetti and garnish with fresh parsley.
