Tuscan Bread Soup

Ingredients

1 red onion, diced

2 cloves garlic, thinly sliced

1 tsp chilli flakes

2 pinches Pukara Estate Salt Flakes

2 tbsp Pukara Estate Premium Olive Oil

800g peeled Italian tomatoes

½ cup red wine

½ loaf sourdough, cut into cubes

12 basil leaves, chopped

2 tbsp Pukara Estate Barrel Aged Balsamic Vinegar

Method

Add red onion, garlic, and chilli flakes to a pot with a pinch of salt and a drizzle of oil. Cook for approximately 2 minutes.

When the onion is soft, add tomatoes and red wine, mix together, and leave to cook for a further 5 minutes.

After 5 minutes, add sourdough, basil, balsamic vinegar, and another pinch of salt. Mix well.

Serve with a few basil leaves and a drizzle of olive oil on top.
