Ingredients
2 medium, very fresh garlic cloves, peeled
¼ tsp salt
1 large egg yolk, at room temperature
5 tbsp Pukara Estate Premium Extra Virgin Olive Oil
Method
Fill a mortar with boiling water, let sit for 1 minute, then spill out the water and dry the mortar. Add the garlic cloves and salt, then pound into a smooth paste. Once the paste is achieved, add the egg yolk and blend it with the garlic by moving the pestle rapidly against the walls of the mortar. Slowly drizzle in the olive oil while continuously stirring with the pestle until a thick mayonnaise-like consistency is reached. Add a little water if necessary to adjust the texture. Taste for seasoning and add more salt if needed. Refrigerate before serving.
