This fresh salad can be served as a side dish or with shredded chicken or tofu for a more substantial meal. The salad really allows the Wasabi EVOO to shine.
Ingredients
Half Chinese cabbage, sliced thinly
2 carrots, julienned
2 spring onions, finely sliced
1 small red onion, thinly sliced
1 large cucumber, julienned
1 red capsicum, julienned
1 tbsp toasted sesame seeds
1 tbsp chopped coriander
1 tbsp chopped mint
Dressing
1 lime, juiced
80mL Pukara Estate Wasabi Extra Virgin Olive Oil
1 tsp light soy sauce
1 tsp honey
½ tsp sesame oil
1 tsp minced ginger
1 garlic clove, crushed
Method
Combine all the dressing ingredients in a jar, season, and shake well. Combine all the sliced vegetables and herbs in a large bowl and toss well. Add the sesame seeds, pour over the dressing, and toss again. Serve alongside grilled or barbecued meats, salmon, tuna, or add some grilled tofu for a more substantial salad.
