Guava Granita Topping for Freshly Shucked Oysters

A fresh-tasting, simple-to-make recipe. This fruity granita is the perfect accompaniment to fresh oysters. Make ahead and serve with sparkling wine.

Ingredients

120ml Guava Vinegar

80ml water

1 tbsp lime juice

2 tsp caster sugar (or to taste)

2 kaffir lime leaves

Method

Place all ingredients in a small saucepan and gently heat until the sugar dissolves. Remove from heat, take out the lime leaves, and discard. Allow the mixture to cool completely.

Pour mixture into a tray no deeper than 4cm. Place into the freezer for 50 minutes or until almost set solid. Use a fork to scrape backward into flakes.

Serve about a heaped teaspoon onto each freshly shucked oyster and serve immediately.
