Tomato And Olive Bruschetta

A great afternoon snack or simple entrée. Use the freshest, sweetest tomatoes possible for this traditional and delicious dish.

Ingredients

3 tbsp Pukara Estate Premium Extra Virgin Olive Oil

2 tbsp Pukara Estate Barrel Aged Balsamic Vinegar

4 Roma tomatoes

1 small red onion, finely diced

Half cup finely chopped Pukara Estate Olives

2 finely chopped garlic cloves

Half cup chopped fresh basil

1 loaf crusty bread, sliced thickly

Method

Toast bread over a hot grill until golden, then drizzle with a little olive oil. In a bowl, combine tomato, olives, basil, onion, garlic, remaining EVOO, balsamic vinegar, salt, and pepper. Spoon mixture over toasted bread and serve. Garnish with fresh basil leaves.
