A delicious prawn recipe that is for the adults only.
Ingredients
1/4 cup Pukara Estate Lime Extra Virgin Olive Oil
1/4 cup fresh lime juice
3 tbsp Tequila
2 tbsp Cointreau or Grand Marnier
1/2 diced shallot
2 large cloves garlic, crushed
1/4 cup finely diced red onion
1/4 tsp curry powder
1 tsp sea salt
1/4 tsp ground cumin
1/2 tsp fresh black pepper
2 kg green prawns, peeled and deveined, tails on
1 tbsp Pukara Estate Premium Extra Virgin Olive Oil
Method
Place all the ingredients except the prawns and Premium Extra Virgin Olive Oil in a container suitable for marinating and mix well. Add the prawns and refrigerate for an hour, turning every 15 minutes.
Heat a heavy-based frying pan to medium-high heat and add the Premium Extra Virgin Olive Oil. Remove the prawns from the marinade and cook for no more than a minute on each side.
Put the prawns aside in a warm spot and add the marinade mixture to the pan. Allow to reduce by a third.
Serve on white rice and garnish with shredded coconut or fresh broad-leaf parsley.
