Ingredients
500g French beans
Pukara Estate Premium Lime EVOO
1 fennel bulb
1 tin butter beans (large size)
2 cloves Elephant or Russian garlic (or 4 cloves regular garlic)
Half bunch continental parsley
Pukara Pepper & Olive Smoked Salt Flakes
Method
Steam the French beans until cooked but still slightly firm, then rinse quickly in cold water to refresh. Cut the fennel bulb in half, remove the core, and slice lengthwise into thin strips about the same size as the French beans. Steam until just tender, then rinse quickly in cold water to refresh. Drain the butter beans and rinse well in cold water to remove all of the tinned liquid. Roast the unpeeled garlic in a hot oven for about 10 minutes, then peel and slice thinly. Combine the French beans, butter beans, and fennel in a bowl. Season with Pepper & Olive Smoked Salt to taste. Drizzle with Lime EVOO and gently toss until well coated. Sprinkle over the thinly sliced garlic and chopped parsley.
Note: Semi-dried tomatoes (dry, not in oil) can be used instead of the butter beans or as an addition. Serve warm with crusty bread.
