Abalone Pasta

Ingredients

300g Farmed baby abalone
250g Spaghetti
1 Clove garlic, thinly sliced
1 Red chilli, thinly sliced
1 Drizzle Pukara Estate Premium Olive Oil
Pukara Estate Smoked Salt Flakes
1 lemon cheek, juiced
2 Sprigs parsley

Method

Run your knife through the abalone and pull until the meat is detached and wash in water.
Boil water in a pot and place in spaghetti, cooking for approximately 5 minutes.
Thinly slice abalone, garlic, and chilli. Add oil into a hot pan with a pinch of salt, stir together, and cook for a few minutes before removing from heat.
Place cooked spaghetti into the pan and stir together well with another drizzle of olive oil and a squeeze of lemon juice.
Once stirred together well, plate the spaghetti with a few sprigs of parsley on top.
