Agrodolce, meaning "sweet and sour" in Italian, describes the flavour of our fig balsamic vinegar, a delicious thick and syrupy condiment.
Ingredients
270g jar of kalamata olives, drained
1/2 orange, zest peeled into wide strips
1/2 teaspoon fennel seeds, toasted
1/4 teaspoon chilli smoked salt flakes
3 bay leaves
40ml fig balsamic vinegar
40ml garlic extra virgin olive oil
Method
Pour oil into a small saucepan and heat over medium-low heat until just warm.
Add the remaining ingredients to the oil and marinate on low heat for 30 minutes.
Serves 4 to 6 as an entrée or as part of an antipasto platter.
