This dish is simple and delicious and will fuel you for the entire day.
Ingredients
4 eggs
2 fresh chorizo sausages, diced into chunks
1 tomato, roughly chopped
2 tsp Pukara Estate Chilli Flavoured Olive Oil
2 tbsp Pukara Estate Caramelised Onion Jam
Method
In a small skillet pan, add chilli oil and chorizo and pan-fry until golden. Add tomato and sauté until soft. Evenly spread with onion jam. Crack eggs over the mixture and place under a hot grill until the whites are opaque but the yolk is still soft. Serve with slices of crusty bread.
