This dish can be served on its own as an entrée.
Ingredients
8 fresh baby beets, peeled and quartered
200g goat’s cheese
4 sprigs of thyme
1 tsp ground nutmeg
80mL Pukara Estate Caramelised Balsamic Vinegar
40mL Pukara Estate Premium Extra Virgin Olive Oil
Pinch of Pukara Estate Oak Smoked Salt
Method
Preheat oven to 180°C. On 4 large squares of baking paper (roughly 25cm x 25cm), divide the quartered baby beets and goat’s cheese evenly. Add a sprig of thyme to each parcel, drizzle with caramelised balsamic and premium olive oil, then season well with smoked salt and a sprinkle of ground nutmeg. Wrap up each parcel in the baking paper and seal with kitchen string. Place parcels on a flat baking tray and cook for 45-50 minutes. Remove from the oven, snip the string, and serve still in the parcel. Enjoy with a rocket salad and crusty bread.
