Kale & Goat’s Cheese Frittata by Ben Milbourne

Ingredients

1 tbsp Pukara Premium EVOO

1 cup kale, chopped

100g goat’s cheese

75g cheddar cheese, grated

1 cup assorted mushrooms, roughly chopped

5 eggs

Pinch of Pukara Estate Oak Smoked Salt Flakes

To Serve:
Pukara Estate Capsicum & Chilli Jam

Method

In a pan over medium heat, add olive oil and kale. Sauté for 2 minutes, then add mushrooms and cook for a further 3 minutes.

In a bowl, whisk together eggs, goat’s cheese, and a pinch of salt, leaving a few chunks of goat’s cheese in the mixture. Mix through the cheddar cheese.

Add the egg mixture to the pan over the kale and mushrooms. Cook on the stove until the egg is 90% set, then transfer to the oven and bake at 180°C for 5-10 minutes or until golden brown.

Serve with Pukara Estate Capsicum & Chilli Jam.
