Tuna Tartare by Ben Milbourne

Ingredients

1 tsp fish sauce

Juice of 2 limes

1 tbsp sugar

1 tbsp soy sauce

1 tbsp Pukara Estate Extra Virgin Olive Oil

2 purple shallots, finely diced

1 chilli, finely diced

1 garlic clove, finely diced

1 tbsp coriander, chopped

Pinch of Pukara Estate Salt

50g fresh tuna loin

Method

In a small bowl, combine the fish sauce, lime juice, sugar, soy sauce, olive oil, shallots, chilli, garlic, coriander, and a pinch of salt.

Cut the tuna into 1.5cm x 1.5cm cubes and add to the bowl with the dressing. Stir until the tuna is well coated.

Serve immediately with a pinch of salt.
