Ingredients
1 Side of kingfish
2 Tbsp Tomato oil
Juice of half a grapefruit
3 Cherries, thinly sliced
3 Sprigs coriander
2 Sprigs parsley
Pukara Estate Premium Extra Virgin Olive Oil
Pukara Estate Oak Smoked Salt Flakes
Method
Tomato Oil
Place cherry tomatoes into a roasting tray and cover with oil and a pinch of salt.
Slowly roast in the oven for approximately 45-75 minutes.
Remove from the oven, strain the oil, and dehydrate the leftover tomato skins.
Kingfish Crudo
Remove the skin from the kingfish, slice into two fillets, and remove the bloodline.
Thinly slice the kingfish into small pieces and arrange on a plate.
Drizzle with tomato oil and grapefruit juice.
Sprinkle with a pinch of smoked salt, then garnish with sliced cherries, coriander, and parsley.
Finish with a drizzle of Pukara Estate Extra Virgin Olive Oil.
