Mushroom Soup

Ingredients

4 cups mushrooms, roughly chopped

1 onion, roughly chopped

8 cloves garlic, roughly chopped

1 tbsp butter

2 tbsp Pukara Estate Truffle Extra Virgin Olive Oil

Pukara Estate Oak Smoked Salt Flakes

1 tub crème fraîche

2 cups water

2 tbsp chicken & beef stock

Method

Preheat the oven to 160°C.

Place mushrooms, onion, garlic, butter, olive oil, and a pinch of salt onto a tray. Roast in the oven for 10-15 minutes.

Remove the tray from the oven and add crème fraîche, water, and stock. Mix well, then return to the oven for another 10-15 minutes.

Transfer everything into a pot and blend until smooth.

Serve with a drizzle of truffle oil over the top.
