Peppered Chicken Skewers

Serve with a green salad and steamed chat potatoes.

Ingredients

250g chicken breast, cut into bite-sized pieces

1 green or red capsicum, deseeded and diced

2 medium zucchini, cut into 1cm thick rounds

60ml Pukara Estate Pepper EVOO

1 garlic clove, crushed

1 small red chilli, chopped

1 tbsp chopped parsley

1 lemon, juiced

Method

In a small bowl, combine the Pepper EVOO, lemon juice, garlic, chilli, and parsley. Stir well.

Start each skewer with a piece of zucchini, followed by a piece of chicken, then a piece of capsicum, then another piece of chicken. Repeat with zucchini and capsicum until the skewer is nearly full.

Brush the Pepper EVOO mixture onto the chicken and vegetables.

Place skewers on a hot BBQ or grill plate. Turn twice, basting each time with the Pepper EVOO mixture.

Place on a serving plate and drizzle with some lemon juice and extra Pepper EVOO.

Serve with a green salad and steamed chat potatoes.
