Roasted Winter Vegetables

A nourishing winter side dish of golden roasted vegetables, finished with the vibrant green intensity of our first pressed Novello Extra Virgin Olive Oil.

Cook 40 minutes
Serves 4 as a side

Method

  1. Preheat oven to 200°C.
  2. Place the prepared pumpkin, carrots, parsnips, onion and garlic in a baking dish.
  3. Coat generously with Novello Extra Virgin Olive Oil, then season with cracked pepper and Pepper & Olive Smoked Salt Flakes.
  4. Roast for 40 minutes, or until the vegetables are golden and tender.
  5. Arrange on a large serving plate and finish with an extra drizzle of Novello before serving.
Serve alongside grilled lamb or chicken, or spoon over crusty bread for a simple winter dish with bold seasonal flavour.
