Pesto Pasta Salad
A classic pesto pasta dish a little more substance and flavor. An excellent example of the versatility of the Pukara range.
Ingredients
4 cups cooked pasta
1 cup Pukara Estate Basil Pesto
¼ cup pine nuts
1 cup fresh peas
1 small punnet cherry tomatoes, halved
½ cup coarsely chopped basil
2 tbsp Pukara Estate Premium Extra Virgin Olive Oil
Salt and pepper
Method
Place the cooked pasta in a large bowl and stir through the pesto. Gently combine the pine nuts, cherry tomatoes, and peas. Add the Premium Olive Oil, fresh basil leaves, and season with salt and pepper to taste. Serve immediately or refrigerate for later.
