Pumpkin And Fetta Salad

Use your favourite Pukara vinegar to finish the dish off with a little sweetness.

Ingredients

Half butternut pumpkin

3 cups fresh green beans

2 cups cubed fetta cheese

1 tbsp paprika

1/3 cup Pukara Estate Lime Extra Virgin Olive Oil

3 tbsp fresh lime juice

Salt and pepper

Method

Peel the pumpkin and cut it into cubes.

Place a small amount of Lime Olive Oil in a baking tray and toss the pumpkin with paprika and salt until coated.

Cook in a hot oven for 15 minutes or until the pumpkin is just soft.

Blanch the green beans and set them aside to cool.

After the pumpkin and green beans have cooled, combine them in a bowl with the fetta cheese.

Mix the remaining Lime Olive Oil and fresh lime juice, then toss through the salad.

Add salt and pepper to taste.
