Just as the name suggests, this quick dish is rich and delicious.
Ingredients
1 packet penne pasta or similar
1/4 cup Pukara Estate Premium Extra Virgin Olive Oil
1 cup chopped artichoke hearts in brine or oil
1 small red onion, diced
2 cups chopped Roma tomatoes
1/3 cup Pukara Estate Barrel Aged Balsamic Vinegar
2 tbsp fresh lemon juice
1 cup chopped salami
2 tbsp capers
1 cup freshly grated parmesan cheese
2 tbsp Pukara Estate Roast Mushroom and Olive Tapenade
Method
Cook the pasta according to the packet instructions. Drain and allow to cool.
In a small bowl, whisk together Premium Olive Oil, lemon juice, and balsamic vinegar.
In a salad bowl, combine the pasta with all other ingredients.
Gently fold through the salad dressing.
Add salt and pepper to taste.
