Ingredients
1kg assorted tomatoes, roughly chopped
4 shallots, roughly chopped
1 red onion, roughly chopped
1 red chilli, roughly chopped
1 garlic clove, roughly chopped
½ lemon, juiced
1 pinch Pukara Estate Salt
1 pinch pepper
4 Tbsp Pukara Estate Premium EVOO
Method
Preheat oven to 160°C.
Place tomatoes, shallots, onion, chilli, and garlic onto a roasting tray. Drizzle with lemon juice, salt, pepper, and olive oil.
Place the roasting tray into the oven and cook for approximately 45 minutes.
After 45 minutes, remove from the oven and strain the juices from the tomatoes.
