Spaghetti Carbonara

Ingredients

150g dried spaghetti

Pukara Estate Salt

Pukara Estate Chilli Extra Virgin Olive Oil

150g speck, diced

2 eggs

100g parmesan cheese, grated (plus extra to serve)

Method

Add spaghetti to a pot of boiling water, seasoned with a generous pinch of salt. Boil for 5 to 10 minutes or until the pasta is cooked.

In a pan over medium heat, add olive oil and speck. Sauté for approximately 5 minutes until golden brown.

In a small bowl, whisk together the parmesan cheese, a pinch of salt, and eggs.

Turn off the heat and allow the pan to cool for 1-2 minutes. Add the spaghetti straight from the pot (along with a small amount of pasta water) and mix through the speck. Add the egg and parmesan mixture, stirring quickly until the pasta is coated in the sauce.

To serve, top with extra grated parmesan cheese.
