  1. Preheat oven to 150°C and lightly brush a baking tin with oil.
  2. Cut plums in half and remove pits.
  3. Place plums skin side up in tray.
  4. Add spices, water and balsamic vinegar.
  5. Swirl tray so liquid coats plums.
  6. Roast 20–30 minutes until plums are soft but still hold shape.
  7. If needed, add a splash more water — you want a syrupy layer in the base.
  8. Remove spices and serve warm over vanilla ice cream or cream.
