Tomato & Quick-Pickled Orange Salad

A simple heirloom tomato salad with quick-pickled orange, fresh parsley and a generous drizzle of Novello Extra Virgin Olive Oil.

Method

  1. Place the orange slices in a bowl, pour over the white wine vinegar and ½ tsp sea salt, then swirl until evenly coated. Set aside for 10 minutes, reserving the pickling liquid.
  2. Arrange the tomato slices on a serving plate and overlap with the quick-pickled orange.
  3. Whisk the Novello Extra Virgin Olive Oil with half of the reserved pickling liquid until combined. Add more pickling liquid if you prefer a sharper vinegar flavour.
  4. Drizzle the dressing over the tomato and orange.
  5. Finish with parsley, sumac, sea salt and pepper to taste.
  6. Serve immediately.
Serve with warm crusty bread, grilled fish or roasted chicken for a fresh, vibrant dish with bright citrus and peppery olive oil flavour.
