Basil Roast Potatoes

Basil roast potatoes, simple and delicious roast veg with our Basil EVOO!

Ingredients

2 – 3 large sweet potatoes, peeled

8 white potatoes, peeled

1 large red onion

5 – 6 garlic cloves

Fresh parsley

Pukara Estate Pepper & Olive Smoked Salt Flakes to season

Pukara Estate Basil Extra Virgin Olive Oil

Method

Peel the potatoes and chop to desired thickness, then place them into a pot of boiling water for 7 - 10 minutes until easy to poke with a knife.

Drain the potatoes in a colander and leave to dry for 15 minutes.

Preheat oven to 180°C.

Place the potatoes into an oven-safe dish.

Quarter the onion and place it among the potatoes.

Dot the garlic cloves among the potatoes.

Season with Pukara Estate Pepper & Olive Smoked Salt Flakes and pour a generous amount of Pukara Estate Basil Extra Virgin Olive Oil on top of the vegetables.

Place the dish in the oven for 20 – 30 minutes or until the tops of the potatoes begin to turn golden.

Garnish with freshly chopped continental parsley and serve.
