Also good with a drizzle of Fig Balsamic Vinegar over the top after cooking. Use your favourite blue cheese.
Ingredients
6 Large Ripe Figs
6 Slices Prosciutto
Brown Sugar
Pukara Estate Premium Extra Virgin Olive Oil
Blue Cheese, To Serve
Mixed Salad Leaves, To Serve
Method
Cut figs in half lengthways. Brush lightly with olive oil and generously sprinkle with brown sugar. Place under a hot grill until the sugar is melted and caramelised. Allow to cool slightly. Cut prosciutto slices in half and gently wrap one slice around each fig half. Place on a plate and serve with a garnish of washed salad leaves and crumbled blue cheese.
