Individual Beef Wellington
Wonderful dish for a dinner party. Our Roast Mushroom & Olive Relish makes this dish a fast and effortless surprise.
Ingredients
2 scotch fillet steaks
2 tbsp Pukara Estate Premium Extra Virgin Olive Oil
4 tbsp Pukara Estate Roast Mushroom and Olive Relish
2 sheets of ready-rolled puff pastry
1 egg beaten
Method
Preheat oven to 200°C. Heat olive oil in a pan over high heat and sear steaks for 1 to 2 minutes on each side until golden. Roll out the sheet of pastry and cut to just double the size of the steaks. In the middle of both sheets, place half of the mushroom relish, top with seared steak, and then top each with the remaining half of the mushroom relish. Spread the relish over the steaks so they are evenly covered. Fold over the pastry, roll up the sides, and seal edges with a fork. Place on a baking tray lined with paper, give both parcels an egg wash, and bake for 20 minutes or until golden. Serve with mashed potato and a rich red wine reduction.
