A great summer dish and perfect at Christmas, Garlic Prawns with Lemon & Lime Mayonnaise.
Ingredients
800 g of green banana prawns
4 large cloves of garlic
Handful of continental parsley
Salt and pepper to taste
Pukara Estate Garlic Extra Virgin Olive Oil
Pukara Estate Premium Extra Virgin Olive Oil
Pukara Estate Lemon and Lime Mayonnaise
Method
Preheat a large deep pan on medium heat.
Remove the heads, outer shell, and devein the prawns, leaving the tails intact.
Finely chop the 4 large garlic cloves.
In a large bowl, add the prawns and garlic, then coat with Pukara Estate Premium and Garlic Extra Virgin Olive Oils (ratio 3:1).
Add a single layer of prawns to the pan and cook until the underside turns pink. This usually takes 3 – 4 minutes.
Turn the prawns and cook until the entire prawn is pink.
Once cooked, place in a serving bowl, mix through the chopped parsley, and serve with Pukara Estate Lemon & Lime Mayonnaise.
